Brief description, advantages, further prospects for application.

The basic principles of creating food forms of bioprotection based on the use of the alimentary factor of protecting the internal environment of the child’s body from the effects of negative internal and external factors are systematized. The composition of food forms of bioprotection was assessed from the standpoint of medical science in terms of the body’s defense systems, from which antioxidant, immune and microecological balance systems are distinguished, the state of each of which, to a large extent, depends on each other and on the structure and quality of nutrition.

The nomenclature of functional ingredients that perform the role of bioprotection is substantiated – probiotics (live microorganisms of bifidus and lactobacilli – the main representatives of the beneficial intestinal microflora) and prebiotics, the so-called natural food for microorganisms – “bifidus factors”, mono- in the body also play the role of detoxifiers.

Technical requirements for bioprotective products have been developed, which include the definition of the predicted scope of use and requirements for the functional and technological characteristics of products.

The chemical composition of raw materials of plant origin has been studied. It has been established that vegetables, fruits, berries are a source of a whole complex of bioactive substances that are in the form of the most accessible for absorption and are natural prebiotics, antioxidants, immunoprotectors and adequate methods of their use allow the formation of the desired properties of products. The influence of the natural-climatic factor on the antioxidant and bifidogenic properties of raw materials and the possibility of their enhancement due to technological measures have been studied. The choice of raw materials and prebiotic additives is substantiated, the minimum quality specifications and the main safety parameters of raw materials are developed.

Technological solutions have been developed for the rational use of raw materials aimed at maximizing the nutritional value of raw materials and focused on technology, biotechnological methods for using its individual characteristics with the withdrawal and concentration of individual functional ingredients and the formation of bioprotective properties of new products on their basis.
