The largest share of nutritive substances, up to 39.4%, is occupied by fats, represented by 87% of unsaturated fatty acids, about 18% are proteins with a high biological value and 37% are carbohydrates.

For the first time, the influence of technological factors on the formation of stable emulsions during the processing of nut-bearing raw materials has been established; the physicochemical properties of chia seeds and its influence on the formation of the structural and mechanical properties of products have been investigated; scientifically substantiated recipe composition of a universal base for sauce products with a balanced composition of fatty acids; the biological value, physical and chemical properties and safety of the developed products based on nut-bearing raw materials and chia seeds have been established. A serving of formulated products meets the daily requirement for balanced polyunsaturated fatty acids by at least 30%.
