Semi-automatic microprocessor instrument for determining the sedimentation index of wheat flour

Purpose. To determine the sedimentation index (predicting the baking quality) of flour of breeding wheat samples at the early stages of breeding or commercial wheat samples.

Application area. Agriculture.

Advantages. The device helps to perform in express mode an objective forecast of the baking quality of a wheat sample using a minimum weight of flour (~4 g) in the early stages of breeding, to significantly improve the efficiency of breeding for flour quality. At one time, it is possible to evaluate 16 samples of wheat flour, 150-180 samples per shift, in contrast to the method of direct determination of dough rheology, where the productivity is only 10 samples per shift.

Description. The semi-automatic microprocessor device consists of a microprocessor unit, a block package with sixteen graduated cylinders and a DC electric motor. It allows to obtain a high correlation dependence (r = 0.89) of the SDS-30 sedimentation index with the main direct characteristics of the technological quality of wheat dough, such as the “strength” of flour and the dough elasticity index.
