The process of extraction of polysaccharides from vegetable raw materials is carried out by passing an electric current through the “hysop/water” suspension. Electrocontact treatment of plant mass, which induces the phenomenon of electroporation of plant cells under the influence of electromagnetic fields of pulsed electric currents, in comparison with traditional methods of extraction, allows to reduce at least three times and 20 times the energy consumption required to obtain water-soluble polysaccharides of hyssop officinalis. For high-speed (within several minutes) extraction of target substances from the cell into the extractant, rectangular current pulses of millisecond duration sent into an aqueous suspension at a frequency of 500 Hz are most suitable. The practical significance of the work lies in the possibility of developing a high-speed, low-energy, selective technological process for electrocontact extraction of valuable components from plant biomaterials.
